Being an indian i don’t find the use of coconut in south indian food weird at all.

You missed out Gujarat, they use sugar in every dish whether its in dokhla or upma. And, the weird part is all the dishes taste delicious.

This is a lovely piece of information and I treasure it. I had heard the same about East Indian cuisine and I would try to incorporate the two cuisines( Gujarati and East-Indian) in ”Cooking Styles”...that would make the ”weird part” of the delicacy appear special.
