I don’t think I’ve had a bibingka with milk. At most they add some shredded cheddar to the batter. The shredded coconut has to be fresh. Desiccated coconut was probably used previously by migrants who did not have access to the fresh variety. I can’t imagine how that would taste with the freshly baked bibingka! LOL
