Thanks Perrero, it is a great soup from the leftovers. But I feel you could have seared the shredded beef in some red wine for great flavor. Moreover, after adding red pepper as the seasoning I don’t see any point adding black pepper as overdoing...

Thanks! I was just throwing it together from leftovers and am not a big cheese person. The double peppering may have been a bit much, but I’ve found that red pepper and black pepper leave distinctly different aftertastes that I like to pair in MexiCali food. That may just be me tho.

Also loads of cream and cheese would have violated my calorie restrictions . I was trying to keep it under 400 a serving.

Hi Julie, Well I have recently tried a white pepper seasoning in my chicken marinade, followed by the red pepper seasoning in the gravy. I thank you for your double seasoning formulae, but mine was added in a different sequence. As per as cutting down calories is concerned then you can add Tofu in place of cheese, it tastes yummier and is 100 per cent calorie free.
Ah...tofu. I remember eating tofu hot dogs at my hippie aunt’s when I was young. (No mockery...she really was a hippie.)

Tofu hot dogs...I would love to have the recipe Julie. Tofu is good for health and it makes a wonderful casserole along with beef and beans.
Do try it sometime, it helps when you want to cook a single meal and save it up for night
